Chocolate Avocado Pudding

I know what you’re thinking, “avocado and chocolate? EW!” Yeah I thought the same thing, but then I tried this recipe and now I believe.

Everything avocado is amazing!

You seriously cannot taste the avocado in this, it doesn’t turn out green at all, and now I crave this over regular pudding.

Try it. Trust me, you will NOT be disappointed.

And, FYI, this is gluten, dairy, and soy free! PLUS it’s super easy to make this PCOS friendly! Just swap out the maple syrup for brown rice syrup.

Ingredients:
1 avocado, mashed
1/4 cup cocoa powder
3 Tbsp maple syrup (or brown rice syrup)
1 tsp vanilla extract
6 Tbsp milk (I used vanilla almond)

Directions:
Throw all the ingredients into a food processor and blend until smooth.

 

Done and DONE.

Top that shit off with some fruit or whipped cream. You can also use it as a guilt-free frosting!

Since this does contain avocado, it definitely doesn’t have the shelf life of regular pudding. So, make sure you eat it in the next 2-3 days!
