Mini Breakfast Frittatas

Ingredients
  

  • 8 eggs
  • 1 Tbsp milk
  • Salt + pepper
  • Your choice of toppings

Method
 

  1. Preheat oven to 350 degrees
  2. Whisk together eggs, salt, pepper, and milk.
  3. Line muffin tins with paper liners or spray with non-stick cooking spray
  4. Pour egg mixture into tins, filling about 2/3 of the way
  5. Add veggies and protein
  6. Top with cheese
  7. Bake for 20-23 minutes. Keep an eye on them around the 20 minute mark, they will be puffy and set in the middle when done.

Notes

Store for up to 5 days in the fridge and reheat in the microwave for a quick weekday breakfast.
