Easy chicken thighs recipe

Chicken thighs are a great alternative to chicken breasts (which we eat way too often). This recipe is SO easy and it’s PCOS friendly!

We eat a lot of chicken around here and I’m getting pretty sick of it. Grilled chicken, chicken cutlets, chicken parmesan, I was DONE. Until I realized it’s not the chicken, it’s that we were always using chicken breasts. So, I decided it was time to pull out this super easy chicken thighs recipe for a really quick, delicious and healthy dinner.

PCOS Friendly Chicken Thighs

Ingredients:

4 bone-in, skin on chicken thighs

1/4 cup coconut oil

Salt

Pepper

Garlic powder (optional)

Directions

  1. Season thighs on both sides with salt, pepper and garlic powder. Let sit for 20 minutes.
  2. Preheat oven to 450 degrees (425 for convection oven).
  3. Heat oil in 10-12 inch cast iron skillet.
  4. Add thighs, skin side down and brown for about 10 mins. Flip and brown for another 6 minutes.
  5. Finish in oven for 10 minutes or until internal temp reaches 165F.

So easy, so quick and so good you don’t even need any sauce to dip in! Any vegetable will go with this. We had it with brussels sprouts and a kale salad this time, but I’ve also paired the thighs with sweet potatoes and broccoli.
