This dish is amazing with chicken or shrimp, but sometimes I prefer it by itself or as a side dish.
Oh, who am I kidding? I eat this as my main course all the time! PASTA FOR LIFE!
Ingredients:
- 8 oz pasta (your choice, I used thin spaghetti)
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 2T crushed red pepper
- 2T lemon juice
- 2T parsley
- 1/4 cup grated Parmesan cheese
Directions:
Cook pasta according to box.
While pasta is cooking, heat oil in skillet. Add crushed red pepper and garlic. Saute just until garlic becomes fragrant. DO NOT BURN!
Drain pasta and pour into bowl. Add olive oil mixture. Stir in lemon juice, Parmesan, and parsley.
Serve hot with a little more Parmesan and parsley to taste.
