Best Ever Banana Bread
+ Tips on Building a System for Any Space in Your Home
Jay has been begging me to make banana bread for at least a week. So, as the bananas were melting into the counter, I decided today was the day!
And as I began pulling the ingredients out of the cabinet, I realized what a great system I have in my kitchen.
Here’s the thing though… it’s not “pretty”.
I have labels, but not a single canister matches. There’s a hodgepodge of stainless steal, plastic, and mason jars.
It’s not that I prefer it that way, it’s just that the priority right now is not to spend money on matching canisters.
My measuring spoons don’t even match! But they do have their place in the cabinet – I have hooks on the inside of the cabinet door to hang measuring spoons and cups! Brilliant, right?
All of this reminded me that your system doesn’t have to be “perfect” in order for it to work for YOU.
It just has to be laid out in a way that makes sense and allows you to access what you need quickly and efficiently.
So take a moment during your day and notice the systems that are already working for you.
Notice what it is that makes them work and the things that might look weird to others, but make total sense to you.
Start applying what you’ve noticed to other areas of your home to get those systems working for you as well!
And then make this delicious banana bread…
Best Ever Banana Bread
Ingredients:
1 ¾ cups flour
⅔ cup sugar
1 tsp baking powder
½ tsp salt
¼ tsp baking soda
¼ tsp cinnamon, plus some to sprinkle on top before baking
½ cup butter
1 cup banana (2-3 super ripe bananas)
2 eggs
Directions:
- Preheat oven to 350 degrees
- Mash bananas (in a bowl, don’t be a barbarian)
- Mix the first 6 ingredients with pastry blender, cut in butter until course, add bananas and eggs (also in a bowl, but bigger)
- Pour into lightly greased loaf pan (I love using coconut oil for this)
- Sprinkle some cinnamon on top
- Bake for 55 minutes
- Serve with butter, or our favorite, honey butter cream cheese
Ways to change this up:
Turn this recipe into banana muffins! Pour the mixture into lined muffin tins and bake at 350 degrees for 25 mins. Check out my recipe for Chocolate Banana Muffins
Add extras! Chocolate chips, walnuts, raisins, or even peanut butter chips – ½ cup of any of those will be just enough.
